A prime example is Hui Mian, a traditional Henan-style braised hand-pulled noodle dish with a history spanning over 800 years. The essence of Hui Mian lies in its broth, made by boiling and then simmering mutton marrow for at least five hours, resulting in a rich, white broth often referred to as "white soup." Served warm, this broth accompanies noodles and is garnished with ingredients such as soybean threads, mung bean strands, quail eggs, and wood ear mushrooms.
